I love all kinds of fish. But I realised that I seldom cook cod.  That’s going to change.  Yesterday I made grilled cod with mixed greens and yellow pepper for lunch.

Before cooking, I seasoned the fish with salt and pepper along with some dried herbs de provences and the juice of half a lemon.

I dressed the salad in a mixture of olive oil, juice of half a lemon and good, seedy, French mustard.

Easy, delicious, nutritious, and it filled me up for the rest of the day.
